  • 1 tablespoon of olive oil, tahini or a quarter of an avocado


  • Optional: salsa, lime, fresh herbs


  • Spice mix to taste (e.g. cumin, paprika, pepper, garlic powder)



Preparation:


  • Cook the grains according to the packet instructions.


  • Fry the meat or plant-based alternative with your chosen spices.


  • Add the vegetables and stir-fry briefly.


  • Mix everything in one bowl and optionally add a topping such as avocado, salsa or yoghurt.


  • Serve immediately or store in the fridge.


Possible variations


  • Use tofu or tempeh instead of meat


  • Replace rice with bulgur, couscous or farro


  • Add beans or chickpeas for extra texture


  • Finish with fresh herbs, citrus juice or seeds
